Nettle Pancake Day

Try something different this Pancake Day. Nettle pancakes are one of the spring wildfoods that we prepare during Sussex Wildlife Trust's Forest School events & training

Recipe

  1. Make a regular pancake mix using equal volume of eggs, milk and flour.
  2. Whisk with a medieval looking whisk crafted in the wood from a few sycamore branches
  3. Nettle tops were blanched in boiling water and added to cooked pancake with a load of cheese. Please wash nettles carefully before use.
  4. We also added a few ground ivy flowers and leaves for extra flavour.
